Strawberry Overnight Oats
Method
Place the oats, strawberry coconut kefir, plant-based drink of choice and vanilla in a bowl. Stir to combine and place in the fridge, covered, overnight. Option to do a quick soak version and soak for 15 minutes.
Taste and add a touch of maple syrup to taste if you like your oats a little bit sweeter or add another splash of plant drink to get it to your ideal consistency. Top with fresh strawberries, banana and a sprinkling of desiccated coconut or seeds.
INGREDIENTS
125g jumbo oats
200ml Cocos Organic strawberry coconut kefir
3/4 cup plant drink
1/2 tsp vanilla extract
1/2 cup fresh strawberries, quartered
2 small bananas, sliced lengthways or into rings
1 tsp seeds of choice or desiccated coconut (we used shelled hemp and desiccated coconut)
