Crispy Tofu Fajitas

Method

Preheat the oven to 200C / 180 fan and line a baking tray with greaseproof paper. Slice the tofu into 1.5 cm thin strips and place on the baking tray. Bake for 10 minutes turning once.

Add the par baked tofu, onions, peppers and marinade to a mixing bowl and toss to combine.

Place back on the baking tray and cook for 20 – 25 minutes until cooked to your liking.

Warm tortillas in the microwave or in a pan for 30 secs – 1 min.

Add the fajita filling to the centre of the tortilla and top with salsa, coriander, avocado, lime and coconut yoghurt. Roll into a burrito and slice in half.

INGREDIENTS

1 extra-large block extra firm tofu, rinsed + pressed

2 medium red onions cut into wedges

1 red pepper cut into 1 cm strips

1 orange cut into 1 cm strips

1 yellow pepper cut into 1 cm strips

Marinade

1 tbsp smoked paprika

2 tbsp ground coriander

1/2 tsp ground cumin

1 tbsp mild chilli powder

1/4 tsp garlic powder

Salt and pepper to taste

3 tbsp extra virgin olive oil

To Serve

4 large tortillas

1/2 cup salsa

3 tbsp fresh coriander, finely chopped

1 large avocado, sliced or diced

1 lime, juiced

1/3 cup Cocos Organic natural yoghurt alternative
