Ranch Quinoa Salad

Method

Add yog ranch dressing ingredients to a small bowl and stir to combine. Taste and adjust the amount of fresh herbs, lemon juice and salt & pepper to taste. Set aside.

Cook quinoa packet in the microwave as per the instructions then allow to cool. Option to make fresh if you prefer.

Add baby gem, corn, avocado, tomatoes, cucumber, pepper, chickpeas and red onion, cooked + cooled quinoa to a large salad bowl. Pour as much coconut yog ranch dressing over the top as you like and toss to combine.

INGREDIENTS

Coconut Yogurt Ranch Dressing:

125ml natural coconut milk yog

2 tbsp vegan mayonnaise

1 tbsp finely chopped fresh parsley

½ tbsp finely chopped fresh dill

½ tbsp finely chopped fresh chives

1 garlic clove, minced

Juice from 1/2 lemon

1/2 tsp flakey salt

1/2 tsp onion powder

1/4 tsp black pepper

Chopped Salad:

1 head baby gem, finely chopped

60g tinned sweetcorn, drained

1 medium avocado, diced small

120g cherry tomatoes, quartered

1/2 large, cucumber, diced small

1 red pepper, diced small

1x 400g tin chickpeas, rinsed + drained

1/2 small red onion, diced small

1 packet cooked quinoa
