Baked Berry Oat Bars

Method

Preheat the oven to 180C / 160 fan and line an 8 x 8 cm baking tin with parchment and grease well.

Add flaxseeds and water to a large mixing bowl and leave to stand for 5 minutes to make a flax egg.

Add oats, nut or oat milk, maple, coconut oil, banana (or applesauce if using instead), peanut butter, baking powder, cinnamon, vanilla and salt. Mix to combine then fold through the berries.

Pour the mix into prepared baking tin.

Bake for 40 minutes or until the center is set. This gives a soft oatmeal bar as pictured. For a drier oatmeal bar, bake for a little longer or use a touch less milk.

Cool for 5 minutes before serving. Spoon or slice and serve with a generous spoon coconut yog.

INGREDIENTS

1 tbsp flaxseeds

2.5 tbsp water

255g old-fashioned oats – can be gluten free if required

415ml almond, cashew or oat milk

3 tbsp maple syrup

35g coconut oil, melted

1.5 medium bananas (120g) or unsweetened applesauce

2 tbsp peanut butter

1 tsp baking powder

1 tsp ground cinnamon

1 tsp vanilla extract

Pinch of salt

220g fresh or frozen mixed berries, (don’t thaw if frozen)
