Burrito
Method
Add the cooked rice, olive oil, beans, sweetcorn, spices, salt and pepper to a bowl. Warm in the microwave for 2 minutes or heat in pan.
Place the tortilla in the microwave for 30 secs – 1 min to warm or use a frying pan.
Top the tortilla with rice mix, spring onion, coriander, avocado, tomatoes or salsa, coconut milk yog and a squeeze of lime.
Roll up, slice in half and enjoy.
INGREDIENTS
1/4 cup cooked brown rice (you can use packet rice)
1 tsp extra virgin olive oil
1/4 cup black beans or kidney beans, drained + rinsed (45g)
3 tbsp tinned sweetcorn
1/8 tsp smoked paprika
1/8 tsp ground cumin
Pinch of salt and pepper
1 large flour tortilla
1 spring onion, finely chopped
1 tbsp coriander, finely chopped
1/4 small avocado, sliced
3 cherry chopped tomatoes, chopped or 1 tbsp salsa
1 tbsp Cocos Organic natural coconut milk yog
Squeeze of lime
